English Muffin Chicken Reubens

  • Preheat an outdoor barbecue grill or oven broiler.
  • Lightly coat both sides of the chicken cutlets with cooking spray, and sprinkle with Mrs. Dash seasoning. Place on a preheated outdoor barbecue grill, or under a broiler, about 5 inches from the heat source, and cook about 3 to 4 minutes on each side, or until the chicken is no longer pink inside when cut with a knife. Set aside.
  • Place the sauerkraut in a medium-sized bowl. Add the sour cream, and stir to mix well. Set aside.
  • Place a cooked cutlet on the bottom half of each muffin. Top each with 1/2 cup of the sauerkraut mixture and 2 tablespoons of cheese.
  • Place the topped muffins under the broiler or top brown in a toaster oven for about 1 minute, or just until the cheese melts. Crown with a muffin top and serve immediately.
