Southwest Rice and Smoked Turkey Salad

DIRECTIONS

  • Place the water in a 1-quart saucepan, and bring to a boil over high heat. Stir in the rice and cover. Reduce the heat to medium-low, and cook for 10 minutes, or until all of the water has been absorbed.
  • Transfer the rice to a small bowl, and chill for 10 minutes, or until ready to use.
  • Place the rice, turkey, tomato, green pepper, corn, and onion in a large bowl, and toss to mix well. Set aside.
  • To make the dressing, place all of the remaining ingredients in a small dish, and beat until well mixed. Pour the dressing over the salad, and toss to mix well.
  • Serve immediately, or cover and chill until ready to serve.
