DIRECTIONS

  • 1. Bring a 4-quart pot of water to a rolling boil. Add the pasta, and cook according to package directions.
  • 2. While the water is heating up, coat a 12-inch nonstick skillet with cooking spray, add the oil, and preheat over medium heat. Add the garlic, and cook, stirring often, for 1 to 2 minutes, or until soft but not brown.
  • 3. Add the tomatoes and beans to the skillet, and toss to mix. Cook, stirring constantly, for 2 to 3 minutes, or until the tomatoes begin to soften.
  • 4. Add the spinach, broth, garlic powder, and black pepper to the skillet, and stir to mix. Increase the heat to high, and bring to a boil. Then reduce the heat to low and simmer, stirring occasionally, for 10 to 12 minutes while the pasta cooks.
  • 5. Drain the pasta, and divide among individual serving bowls. Top with the sauce and serve immediately.
