Turkey with Mushroom Marsala Sauce

Turkey with Mushroom Marsala Sauce

DIRECTIONS

  • Coat a 12-inch skillet or wok with nonstick cooking spray, and preheat over medium-high heat. Add the onions, and cook, stirring frequently, for about 4 minutes. Add the mushrooms, and continue to cook for about 5 minutes, or until the mushrooms become browned and tender.
  • Cut any large turkey slices in half to make handling easier. Reduce the heat to medium, and add the turkey. Cook, tossing occasionally, for a minute or 2, or just until the turkey is hot.
  • Add all of the remaining ingredients to the skillet, and toss well. Transfer the turkey to a serving dish, and cover to keep warm.
  • Increase the heat to high, and bring the skillet mixture to a boil. Cook a minute or 2, until slightly reduced, pour over the turkey, and serve immediately.
