Brown Rice with Roasted Vegetables

  • Preheat the oven to 450°F. Coat a 9-x-13-inch baking dish with cooking spray, and set aside.
  • Place the broth, soy sauce, Mrs. Dash® seasoning, and garlic powder in a small bowl, and stir to mix. Set aside.
  • Arrange the onion, bell pepper, zucchini, and egg-plant in the baking dish. Pour the broth-soy sauce mixture on top. Cover with aluminum foil, and bake for 25 to 30 minutes, or just until the vegetables are tender, but not mushy.
  • While the vegetables are cooking, place the water in a 2-quart saucepan, and bring to a boil over high heat. Stir in the rice, cover, and reduce the heat to medium-low. Cook for 10 minutes, or until all the water has been absorbed.
  • Spoon the cooked rice onto a serving platter. Top with the roasted vegetables and their cooking juices, and serve immediately.
