Brown Rice with Roasted Vegetables

DIRECTIONS
Preheat the oven to 450°F. Coat a 9-x-13-inch baking dish with cooking spray, and set aside.
Place the broth, soy sauce, Mrs. Dash® seasoning, and garlic powder in a small bowl, and stir to mix. Set aside.
Arrange the onion, bell pepper, zucchini, and egg-plant in the baking dish. Pour the broth-soy sauce mixture on top. Cover with aluminum foil, and bake for 25 to 30 minutes, or just until the vegetables are tender, but not mushy.
While the vegetables are cooking, place the water in a 2-quart saucepan, and bring to a boil over high heat. Stir in the rice, cover, and reduce the heat to medium-low. Cook for 10 minutes, or until all the water has been absorbed.
Spoon the cooked rice onto a serving platter. Top with the roasted vegetables and their cooking juices, and serve immediately.
