Zucchini with Toasted Bread Crumbs

Zucchini with Toasted Bread Crumbs

DIRECTIONS

  • Cut the zucchini into 1-inch-thick circles; then cut each circle in half.
  • Coat a 12-inch nonstick skillet with cooking spray, add the oil, and preheat over medium-low heat. Add the garlic, and cook, stirring often, until soft. Be careful not to burn.
  • Toss the zucchini and basil into the skillet, mixing well with the garlic. Reduce the heat to low, cover, and simmer, stirring occasionally, for 5 to 7 minutes, or until the zucchini is tender.
  • Add the bread crumbs to the skillet, and mix the ingredients well. Increase the heat to medium, and continue to cook, stirring often, for 5 minutes, or until the bread crumbs begin to brown.
  • Spoon the zucchini into a serving bowl, sprinkle with the Parmesan cheese, and serve immediately.
