Zucchini with Toasted Bread Crumbs

DIRECTIONS
Cut the zucchini into 1-inch-thick circles; then cut each circle in half.
Coat a 12-inch nonstick skillet with cooking spray, add the oil, and preheat over medium-low heat. Add the garlic, and cook, stirring often, until soft. Be careful not to burn.
Toss the zucchini and basil into the skillet, mixing well with the garlic. Reduce the heat to low, cover, and simmer, stirring occasionally, for 5 to 7 minutes, or until the zucchini is tender.
Add the bread crumbs to the skillet, and mix the ingredients well. Increase the heat to medium, and continue to cook, stirring often, for 5 minutes, or until the bread crumbs begin to brown.
Spoon the zucchini into a serving bowl, sprinkle with the Parmesan cheese, and serve immediately.
