Barbecue-Roasted Chicken

  • Light the coals. Truss the chicken, rub it with oil, and sprinkle it with salt and pepper to taste. Arrange on a spit. When the fire is ready, place the spitted chicken on the rotisserie and cook for 1 - 1-1/2 hours, or until a meat thermometer registers 170°F in the breast meat and 185°F in the thigh meat, basting every 15 minutes with the sauce.
  • BARBECUE-BROILED CHICKEN:
  • Cut the chicken into halves or quarters. (Smaller pieces tend to dry out and overdarken.) Place on the grill, skin side up, and cook 10 minutes. Turn and baste every 10 minutes until done, about 40 minutes in all.
