Amaretti Pudding

DIRECTIONS
In a medium, heavy saucepan, warm the low-fat milk over medium heat just until small bubbles form around the edge and the milk is steaming. Remove the pan from the heat and set aside.
Meanwhile, in a medium bowl, whisk together the sugar, cornstarch and salt until blended. (You may need to break up the lumps of sugar with your fingers.) Gradually whisk in the skim milk until the mixture is smooth.
Pour the reserved low-fat milk into the sugar mixture and whisk until blended. Return the mixture to the saucepan and bring to a boil over medium heat, stirring constantly. Continue to boil, stirring, for 1 minute. Remove from the heat and stir in the vanilla.
Ladle the pudding into 4 dessert dishes or glasses, cover and refrigerate for about 1-1/2 hours, or until chilled.
Just before serving, sprinkle each pudding with some amaretti crumbs.
