Arugula-Stuffed Calzones

In a large no-stick frying pan over medium heat, warm the oil for 1 minute. Add the green peppers and garlic. Cook, stirring frequently, for 2 minutes. Add the arugula. Cook for 2 minutes, or until wilted. Remove from the heat. Stir in the ricotta, mozzarella, basil and red pepper,
Divide the dough into 4 pieces. Working on a lightly floured surface, roll or press each piece into a 6" circle or a 4" x 6" rectangle. Divide the filling among the pieces, mounding it on half of the dough and leaving a 1/2" margin. Fold the dough over the filling and crimp the edges well to seal.
Sprinkle a large baking sheet with the cornmeal. Place the calzones on the sheet. Bake at 500° for 8 to 10 minutes, or until golden.
