Turkey-Tomato Vegetable Soup

  • Place the stock in a large soup pot, and bring to a boil over medium-high heat. Boil for 1 minute, and reduce the heat to medium.
  • Add the turkey, onions, garlic, and celery to the pot, and stir to mix. Cover and simmer over medium heat for 15 minutes.
  • Stir in the potatoes, carrots, and seasonings. Cover and simmer for 30 additional minutes.
  • Stir in the tomatoes and peas, cover, and simmer for 15 to 30 additional minutes, or until the vegetables are tender and the flavors are well blended. Taste, adding additional onion salt, if desired. Remove and discard the bay leaf, and serve hot.
