Avocado Salad with Yogurt-Mint Dressing

DIRECTIONS
Halve 2 avocados and ease the flesh out of the shells. Slice 3 halves into fans and drizzle with lemon juice. Mix 2/3 cup unsweetened yogurt and 1 tbsp chopped mint, season with salt, pepper, and lemon juice. Pour the dressing over the fans. Dice the remaining avocado. Garnish the fans with diced avocado and mint sprigs.
