Cold Avocado Soup

  • Halve and pit the avocados.
  • Ease the flesh out of the shells with a tbsp and purée, together with the lemon juice, in a blender or food processor.
  • Stir in the buttermilk and stock. Season with salt, white pepper, and the green peppercorns, and chill.
  • For the garnish, peel, quarter, core, and thinly slice the apple. Trim each slice into a crescent shape. Melt the butter in a skillet and add the sugar and apple. Fry over a medium heat until the apple slices are slightly caramelized.
  • Serve the soup in individual bowls, garnished with the hot apple crescents and a little crème fraîche or sour cream.
