Cold Avocado Soup

DIRECTIONS
Halve and pit the avocados.
Ease the flesh out of the shells with a tbsp and purée, together with the lemon juice, in a blender or food processor.
Stir in the buttermilk and stock. Season with salt, white pepper, and the green peppercorns, and chill.
For the garnish, peel, quarter, core, and thinly slice the apple. Trim each slice into a crescent shape. Melt the butter in a skillet and add the sugar and apple. Fry over a medium heat until the apple slices are slightly caramelized.
Serve the soup in individual bowls, garnished with the hot apple crescents and a little crème fraîche or sour cream.
