DIRECTIONS
Have a barbecue fire ready for indirect cooking , so the hot coals are around the perimeter of the fire pan.
Sprinkle the chicken pieces with salt and pepper and place them, skin side down, around the edge of the grilling rack, so they are directly over the hot coals. Turn frequently for about 10 minutes, until well browned. Watch the chicken carefully; it burns easily. Have a spray bottle of water handy to stop flare-ups. Move the browned chicken pieces to the center of the grilling rack-they may overlap slightly-so they are no longer directly over the fire.
Cover the barbecue, open the vents halfway, and cook for 10 minutes. Turn the chicken and cook covered for 5 minutes more. Brush generously with the sauce, cover, and cook a final 5 minutes. Pass the remaining sauce at the table.
