Bean Sprout and Corn Patties

DIRECTIONS
Lightly squeeze excess liquid from 11 oz cooked or canned corn kernels. Process half the corn in a food processor to a fine purée and transfer to a bowl.
Stir in 1 egg yolk, 1 teaspoon all-purpose flour, salt, pepper, a pinch of sugar, and 1 cup cornflakes.
Add the whole corn kernels and 1 tbsp chopped parsley and set aside to rest for 10 minutes.
Mix in 6-1/2 oz bean sprouts, form into 16 small patties, and fry in 3 tablespoons clarified butter until golden.
