Wooden Bowl Salad with French Dressing

  • Discard any ragged or damaged outer leaves from the head of lettuce and cut the inner leaves into bite-sized pieces. Wash and spin them dry, then pile them into a spacious salad bowl or into individual bowls. Arrange the vegetables, eggs, and cheese decoratively over the top, scatter the herbs over all, and season with salt and pepper.
  • To make the dressing, mash the garlic with the salt in a mortar until it breaks down into a purée, then add several twists of the pepper mill and the vinegar. Whisk in the oil, then taste to make sure the balance is to your liking. Aged vinegar is often too strong for the classic 3 parts oil to 1 part vinegar. Adjust as needed, to taste.
  • Just before serving, pour the dressing over the top and toss well.
