DIRECTIONS

  • Bring raspberries to a boil in 1/4-cup water. Cover and simmer 2 minutes. Stir in gelatin.
  • Add ice cream; stir until melted. Chill until thickened, 20 minutes.
  • Remove from heat.Line bottom of loaf pan with waxed paper. Line bottom of pan crosswise with 6 ladyfingers and 3 ladyfingers upright on each end.
  • Pour gelatin mixture into pan. Trim ladyfingers level with filling. Cover, chill 6 hours or more. Invert onto serving plate, garnish with whipped topping.
