DIRECTIONS

  • Butter a 9 x 9-inch square pan.
  • Combine the wafer crumbs, butter, almonds, and vanilla extract and mix well.
  • Pat half the crumb mixture onto the bottom of the prepared pan. Reserve the remaining crumb mixture.
  • Spread the ice cream over the crumbs. Freeze until firm.
  • Quickly spread the jam over the firm ice cream and cover with the reserved crumb mixture. Cover and freeze. Remove from the freezer 20 minutes before serving. Cut into squares.
