Tuna and Mozzarella on Toast

DIRECTIONS

Preheat the oven to 485°F.

Slice 2 onions and saute in 2 tablespoons butter.

Drain the contents of a 6-oz can of tuna fish.

Remove core and seeds from 1 chile pepper and cut into thin rings.

Half and pit 12 green and 12 black olives.

Toast 4 slices of bread.

Cut 5-oz fresh Mozzarella into 8 slices.

Divide the onions among the slices of bread and cover with the tuna, chile, and olives.

Top each toast with 1 tbsp chopped herbs, then 2 slices Mozzarella, and, finally, 3 tablespoons Parmesan.

Place on the top rack of the oven until brown
