Zuni Squash Soup

DIRECTIONS
Melt butter in a 3-quart pan over medium heat. Add onion and garlic; cover and cook until onion is soft but not brown, 4 to 5 minutes.
Add squash, chiles, chicken broth, bay leaf, oregano and pepper. Bring to a boil. Cover, reduce heat and simmer until squash is tender, 20 to 25 minutes. Remove and discard bay leaf.
In a food processor or blender, puree soup with 1/3 cup of the pumpkin seeds until smooth. (The pureed seeds will still be slightly crunchy.)
Return to pan. Whisk in sour cream and salt to taste starting with 1/4 teaspoon. Heat through without boiling.
Ladle soup into individual bowls. Garnish with sour cream, oregano sprigs and remaining pumpkin seeds.
