Wilted Spinach Salad

DIRECTIONS
Arrange spinach leaves in a large bowl, tearing up any large leaves into bite-size pieces.
Heat a wok until hot. Add oil and swirl to coat wok. Add bacon and stir-fry 2 to 3 minutes or until bacon is just crisp. Add fennel and mushrooms and stir-fry 2 or 3 minutes until crisp-tender.
Add vinegar, mustard, sugar and pepper, tossing to coat vegetables. Pour over spinach leaves and turn leaves gently to coat; leaves will wilt at once. Serve immediately.
