White Stilton and Leek Soup

DIRECTIONS
Put leeks into a large saucepan with potato and stock and cook about 20 minutes or until vegetables are soft.
Puree vegetables and stock in a blender or food processor fitted with the metal blade until smooth. Return soup to pan and add cheese. Heat gently, stirring constantly or until cheese melts; season with pepper.
Divide the soup among individual bowls and spoon a little cream over soup. Create a feathered effect using a wooden pick or a small skewer.
Garnish each portion with parsley sprigs, or leek rings.
