DIRECTIONS
Mix the tomatoes, lemon juice, basil, pepper, and parsley in a bowl. Heat the olive oil in a saucepan. Add the garlic and cook, stirring, for 2 minutes; add the scallions and continue to cook and stir for 1 minute more. Add the tomato mixture and salt, and simmer for 10 minutes as you cook the vermicelli. Drain the pasta, place in a large warm bowl, add the tomato mixture, and mix well.
