DIRECTIONS
Marinate the shrimp, celery, scallion, vinegar, ginger, minced cilantro, and soy sauce for 2 hours.
Brush the insides of a miniature muffin pan with oil. Preheat an oven to 375°F.
Brush one square of wonton with water, and press a second square on top, so that the corners do not line up. Press this square into an oiled muffin pan cavity, and brush the top of the wonton with oil. Repeat with all the wontons, bake until golden brown, then set aside to cool.
Drain the marinated shrimp, and divide up among the wonton bases. Garnish each with chopped peanuts and a cilantro leaf.
