Basil Pesto

Serves 4

INGREDIENTS

the leaves of 1 bunch of fresh basil, well rinsed and dried
1 cup olive oil
1/2 cup pine nuts or walnuts, toasted
3 large garlic cloves, crushed
salt to taste
pepper to taste
1/4 cup grated Parmesan cheese
1/4 cup grated Romano cheese

DIRECTIONS

Place the basil, oil, nuts, and garlic in a food processor and purée, using the pulse switch. Add the cheese, blend, season with salt and pepper, then set the sauce aside. (Pesto will taste better if prepared a day before its use.)
