Baked Brie in Puff Pastry

DIRECTIONS
Preheat an oven to 400°F.
Roll the puff pastry out to a thickness of 1/8 inch. Cut eight circles to the exact diameter of the cheese rounds. Cut four strips of pastry, as wide as the cheese's height, about 10 inches long. Place a brie on one round of dough, and place a second on top. Brush the side of the cheese with the egg wash, then wrap a strip of pastry around the cheese, pinching the upper and lower seams together. Repeat this with the remaining cheeses, brush the exteriors with egg wash, place on a lightly buttered baking sheet, and bake until golden brown.
Toss the almonds with the brown sugar, place on a baking sheet, and bake for 10 to 15 minutes, or until golden brown. Serve the baked brie with the toasted almonds sprinkled on top and garnished with the apple wedges. Mint sprigs may also be added for garnish.
