Chicken Fajitas

  • Rinse the chicken breasts and pat dry with paper towels.
  • In a small bowl, combine the lime juice, garlic, cilantro, smoke flavoring, beer, Worcestershire sauce, Tabasco sauce, and oil. Slip the chicken breasts into a large zip-style plastic bag, pour in the lime juice mixture, seal the top, and turn the bag to coat the chicken evenly. Marinate overnight in the refrigerator.
  • Prepare an indirect-heat fire in a covered charcoal grill.
  • Remove the chicken breasts from the marinade, reserving the marinade. Place the chicken, skin side down, on the grill rack. Cover, position the top and bottom vents three-quarters open, and grill for 8 minutes, basting with the reserved marinade. Turn, re-cover, and grill on the second side, basting occasionally, until cooked through, about 8 minutes longer.
  • Remove the chicken from the grill. You may remove the skin at this point, if desired. Thinly slice the chicken while it is still hot.
  • Place about 1/4 cup of the chicken in each warmed tortilla. Top with salsa and with guacamole and sour cream, if desired. Wrap like burritos and serve at once.
