Basic Method For Cooking Broccoli

DIRECTIONS
Cut off and discard the tough end of the stems and coarse outer leaves of the broccoli. Cut the broccoli into flowerets with short stems and peel the stems lightly with a vegetable peeler. Peel more deeply the thick stems cut from the flowerets, and slice them diagonally, so that they will cook quickly. Drop the stems into a large pot of boiling, salted water and boil 3 or 4 minutes, then add the flowerets. Boil for another 3 - 5 minutes, until the stems are just tender when pierced with a sharp knife. Drain. Toss with melted butter and salt or serve with Hollandaise Sauce.
PURéED BROCCOLI
Put the cooked broccoli through a vegetable mill or purée it in a food processor. Reheat, seasoning to taste with lots of butter, salt, and pepper.
