Baked Chicken Breasts in Honey-Mustard Marinade with Madras Curry

DIRECTIONS

  • The day before, in a bowl, stir together the honey, mustard, soy sauce, and curry powder. Pour into a zip-style plastic bag.
  • Rinse the chicken breasts and pat dry with paper towels.
  • Add the breasts to the bag, swish around, seal the top, and refrigerate overnight. (If you get a late start, you can marinate the chicken for just a couple of hours and it will still taste good.)
  • Preheat an oven to 350°F. Arrange the chicken breasts, skin side up, in an oblong baking dish pretty enough to bring to the table. They should fit snugly.
  • Bake until cooked through, about 40 minutes.
  • Serve from the baking dish, spooning sauce over each serving.
