Baked Chicken Breasts in Honey-Mustard Marinade with Madras Curry

DIRECTIONS
The day before, in a bowl, stir together the honey, mustard, soy sauce, and curry powder. Pour into a zip-style plastic bag.
Rinse the chicken breasts and pat dry with paper towels.
Add the breasts to the bag, swish around, seal the top, and refrigerate overnight. (If you get a late start, you can marinate the chicken for just a couple of hours and it will still taste good.)
Preheat an oven to 350°F. Arrange the chicken breasts, skin side up, in an oblong baking dish pretty enough to bring to the table. They should fit snugly.
Bake until cooked through, about 40 minutes.
Serve from the baking dish, spooning sauce over each serving.
