Thai Beef Salad

DIRECTIONS
Thinly slice the beef across the grain and then cut it into 1/2-inch-wide strips. Set aside.
Place all the vegetables, including the shredded lettuce, in a large bowl and set aside.
To make the Thai Salad Dressing: Whisk all the ingredients together in a small bowl.
To assemble the salad: Spread a lettuce leaf on each of four serving plates. Add the sliced beef and dressing to the vegetables and toss well. Put one quarter of the mixture on each of the lettuce leaves. Garnish with the mint leaves, the optional cilantro sprigs, and the cherry tomatoes, and serve.
