The Classic Hamburger
Ready In: 20 Minutes
Prep Time: 10 Minutes
Cook Time: 10 Minutes
Serves 4
DIRECTIONS
Combine the meat, salt, and pepper in a large bowl and, using your hands, lightly mix to incorporate the seasonings throughout the meat. Form into 4 equal patties, about 3/4 inch thick. Do not pack the patties.
Panfry, using the oil or melted beef fat, grill over medium-hot coals, or broil the burgers to the medium stage or to your preference. Serve on the buns, garnished as you like.
SEASONING HAMBURGERS
MIXING THE SALT, pepper, and other seasonings with the raw meat rather than just sprinkling them on after cooking makes a world of taste difference in burgers. This goes for cheese, too--why not mix in shredded cheese rather than pile it on top to spill and burn? And mixing seasonings with the meat incorporates the flavors of various cuisines into your hamburgers.
