To make the Cola and Chile Barbecue Sauce: Heat the oil over medium heat in a lidded 2- to 3-quart pot. Add the onion and garlic and cook until soft, about 5 minutes, stirring often. Add the remaining ingredients,and bring to a boil. Simmer for 5 minutes. You can add the pork chunks now or, if you want to use the sauce later, simmer it for 45 minutes until it is thick and syrupy. It will keep for up to 2 weeks, covered, in the refrigerator.
