Black Bean Soup

DIRECTIONS
Soak the beans overnight. Drain, and place in a pot. Cover with 3 quarts cold water. Slowly bring beans to a boil, then lower the heat so that the water barely boils. Cook until the beans are tender - about 30 - 45 minutes. Drain.
Sauté onion and carrot in butter. Put the cooked beans, onion, carrot, and seasonings into another pot and add stock. Bring to a boil. Simmer for 20 minutes. Remove the doves and bouquet garni. Puree in batches in the food processor.
