Tart Chicken Salad

  • Put the chicken breasts in a single layer in a small, microwave-safe baking dish with the thicker parts to the outside of the dish. Add a tbsp of the water. Cover and microwave on high for 4 - 5 minutes. Let stand for 2 - 3 minutes, then check for doneness. Set aside to cool.
  • Put the potato in a microwave-safe dish, add a tbsp of water, cover, and microwave on high for 2 - 3 minutes. Set aside to cool. When the chicken is cool, cut into chunks or shred meat into bite-size pieces. Slice the potato. In a large bowl toss together the chicken, potato, cucumber, scallions, and dill pickles until well mixed.
  • In a small bowl, combine the mayonnaise, sour cream, capers, dillweed, and vinegar, and stir until well blended. Taste and season with salt and pepper. Pour over the chicken mixture and toss until the salad is well coated. Refrigerate until served.
