Tortiglioni with Spicy Salami Sauce

Tortiglioni with Spicy Salami Sauce

DIRECTIONS

  • Heat the oil, then add the onion, celery, garlic and chili and cook gently, stirring frequently, for about 10 minutes, until softened.
  • Add the tomatoes, tomato paste, sugar and salt and pepper to taste and bring to a boil, stirring. Lower the heat, cover and simmer gently, stirring occasionally, for about 20 minutes. Add a few spoonfuls of water occasionally if the sauce becomes too thick.
  • Meanwhile, drop the pasta in a large pot of rapidly boiling salted water and simmer, uncovered, for 10- 12 minutes.
  • Chop the salami into bite-size chunks and add to the sauce. Heat through, then taste for seasoning.
  • Drain the pasta, tip it into a large bowl, then pour on the sauce and toss to mix. Scatter over the parsley and serve with grated Parmesan.
