Tortiglioni with Spicy Salami Sauce

Heat the oil, then add the onion, celery, garlic and chili and cook gently, stirring frequently, for about 10 minutes, until softened.
Add the tomatoes, tomato paste, sugar and salt and pepper to taste and bring to a boil, stirring. Lower the heat, cover and simmer gently, stirring occasionally, for about 20 minutes. Add a few spoonfuls of water occasionally if the sauce becomes too thick.
Meanwhile, drop the pasta in a large pot of rapidly boiling salted water and simmer, uncovered, for 10- 12 minutes.
Chop the salami into bite-size chunks and add to the sauce. Heat through, then taste for seasoning.
Drain the pasta, tip it into a large bowl, then pour on the sauce and toss to mix. Scatter over the parsley and serve with grated Parmesan.
