DIRECTIONS
Just before serving, combine the wheat berries, bean sprouts, tomatoes, and avocado in a bowl. Arrange spinach leaves on a plate. Mix remaining ingredients briskly until well blended, pour over the wheat berry mixture, and toss to mix. Spoon onto the spinach leaves and serve.
