Vegetarian Skillet Lasagna

Vegetarian Skillet Lasagna

DIRECTIONS

  • Cook pasta in boiling salted water until just done, about 7 minutes; do not overcook. It should be quite firm. Drain and set aside.
  • In large nonstick or cast-iron skillet, heat oil over medium-high heat. Add mushrooms, onion and bell pepper and sauté until limp, about 3 minutes. Add garlic and sauté 1 minute more. Add tomato sauce, oregano and basil. Reduce heat and simmer for about 10 minutes.
  • While sauce simmers, combine ricotta, egg whites and basil or parsley. Set aside.
  • Taste sauce and adjust seasonings, adding salt and pepper, if necessary. Carefully stir in kale. Continue stirring until well wilted. Carefully stir in pasta, mozzarella, then ricotta mixture. Cover and simmer for 15 minutes.
  • Remove from heat and let sit uncovered for at least 10 minutes before serving.
