Arroz con Pollo (Rice With Chicken)

DIRECTIONS
Wash rice in at least two changes of water. Drain well. Set aside.
Combine chicken broth, sherry and saffron and set aside.
In large nonstick or cast-iron skillet over medium-high heat, heat oil. Add chicken and sauté 2 minutes. Add onion, bell pepper and garlic and continue to sauté until chicken is firm and white, not pink, and vegetables are limp, 3 to 5 minutes.
Add rice and sauté until rice appears toasted, about 4 minutes.
Stir chicken-broth mixture into rice. Bring to boil, cover, reduce heat to maintain gentle boil and cook until liquid is absorbed and rice is tender, about 15 minutes.
Fluff rice with fork. Stir in tomatoes, peas and olives. Season with salt and pepper. Serve at once.
