  • Preheat the oven to 350°F. Line the baking sheets with baking parchment. In a medium bowl, with an electric mixer on low speed, combine the almond paste and sugar. Blend in the egg whites and vanilla extract.
  • Pipe or drop teaspoonfuls of dough 1-1/2 inches apart on the prepared baking sheets. Decorate each cookie with an almond sliver, if you like.
  • Bake in the center of the oven for about 15 to 20 minutes, or until golden. Let the cookies cool completely before removing them from the baking sheet. Store in an airtight container. Well-wrapped cookies may be frozen.
