Banana-Orange Coconut Cookies

DIRECTIONS
Preheat the oven to 350°F. Grease the baking sheets.
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon; set aside.
In a large bowl, with an electric mixer on medium speed, cream the butter, brown sugar, and sugar together. On low speed, add the egg, orange zest, vanilla extract, orange juice, and banana. Beat until smooth. Add the flour mixture to the butter mixture. Stir in 1-1/4 cups of the coconut.
Drop rounded tablespoonfuls of dough (or use a 1-1/4-inch scoop) 2 inches apart on the baking sheets. Sprinkle tops of cookies with the reserved coconut.
Bake in the center of the oven for about 12 to 14 minutes, or until the cookies are very light brown and some of the coconut on top has toasted. Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely. Store in an airtight container.
