Turkey Pasta Salad

  • Preheat grill or broiler. Prepare Salad: Cook pasta in large pot of boiling salted water until just done. Drain and rinse thoroughly to cool. Place in large mixing bowl and toss with oil.
  • While pasta cooks, grill turkey for about 3 minutes per side, until white throughout. Do not overcook. Cut into small cubes. Add to pasta, along with celery, pepper, scallions and parsley. Toss and set aside.
  • Prepare Dressing: Combine all ingredients in blender and process until smooth and creamy. (Salad may be held for several hours, up to 1 day, by refrigerating pasta and dressing in separate airtight containers.)
  • Before serving, allow dressing and salad to return to room temperature, if possible. Remix dressing and pour over salad; toss. Taste and add salt and pepper, if needed.
