Warm Noodle Salad With Beef and Beans

  • Cook noodles in large pot of boiling salted water until just tender. Drain and rinse thoroughly to cool.
  • Combine meat with oyster sauce, soy sauce, chili paste and garlic in medium-size bowl. Heat oil in large wok. Add beef and green beans and stir-fry until meat is just browned, about 2 minutes. Add broth and cover. Steam until beans are tender, about 2 minutes. Remove wok from heat. Stir in noodles, scallions and tomatoes.
  • To serve, arrange greens in large salad bowl or on individual salad plates. Mound warm salad on top. Serve at once.
