DIRECTIONS

  • Combine flour, salt, and milk in a mixing bowl and mix to a thin, smooth batter. Add eggs, sugar, and lemon rind; beat well. Add apples; stir into batter.
  • Melt butter in an 8-inch frying pan. Pour apple mixture into the pan, distributing apples evenly over bottom. Cook over medium heat until set and golden brown on the underside.
  • Invert pancake onto a plate the same size as the pan. Add a little more butter to the pan if needed and slide pancake back in to brown the other side.
  • Turn out onto a heated serving dish; serve hot. To make this a dessert, sprinkle the pancake with confectioners' sugar.
