Warm Chicken Teriyaki Salad & Warm Pineapple Chicken Salad

  • Set oven to broil or start the coals of an outdoor barbecue.
  • If using chicken breasts, remove the tenderloin, the small strip of meat on the rib side of the breast, and cook separately. If the chicken breasts are very thick, lb the thickest part between sheets of plastic wrap with the flat side of a meat tenderizer. (This will ensure that the chicken cooks quickly; if time is not important, you can skip these steps.) Brush the chicken, pineapple slices, red pepper, and onions with teriyaki sauce. Broil or grill the chicken until no longer pink in the center, 5 - 6 minutes per side, and until the pineapple, peppers, and onions are tender. Transfer to a cutting board and cut the chicken into thin slices. Cut the pineapple slices into wedges, the peppers into 2-inch pieces, and separate the onion slices into rings.
  • Arrange the salad greens on four dinner plates. Arrange the chicken, pineapple, red peppers, and onions on the plates, omitting any that the children might dislike. Garnish the salads for the grown-ups with green onions. Serve with Pineapple Teriyaki Dressing.
