Baked Salmon

DIRECTIONS
Preheat oven to 450 degrees F. Lightly spray a baking dish with cooking spray. Rinse the salmon and pat dry with paper towels.
Mix together the coriander, paprika, brown sugar, salt, and pepper in a small bowl. Rub the mixture into the salmon for the grown-ups and place in the baking dish. Bake for 20 - 25 minutes, until the fish flakes easily.
Combine the pineapple, vinegar, and marmalade in a small saucepan. Bring to a boil over high heat. Lower the temperature to medium and cook until the mixture has reduced by one-half, about 10 minutes.
Stir in 1 chipotle chile to the remaining sauce. Taste for spiciness. Add the other chile, if desired, and cook for another 5 minutes.
Serve with the chipotle sauce brushed over the top.
