DIRECTIONS
With a meat grinder, coarsely grind the corn and place it in a mixing bowl. Add the cornmeal, cheese, milk, sugar, and salt, and mix thoroughly with an electric mixer.
Using a 1-1/2 or 3-inch ring mold, form the mixture into about 12 large or 24 small patties. Stack them on a lightly greased baking sheet with parchment paper between them. Refrigerate for 30 minutes.
Lightly butter a griddle or heavy skillet. Cook the arepas over medium-low heat until brown, about 3 minutes per side.
