Black Bean Soup

DIRECTIONS
Clean beans for rocks and other objects and soak for 1 - 2 hours.
Put the beans in a large saucepan or stock pot with water and bring to a boil. Add remaining ingredients, except cilantro and salt, and cook 2 - 2-1/2 hours, or until beans are soft.
Add cilantro and salt to taste. The soup should be moderately thick.
Use the soup to make Black Bean Chile or serve garnished with Pico de Gallo, sour cream, and grated cheese.
