Black Bean Soup

  • Clean beans for rocks and other objects and soak for 1 - 2 hours.
  • Put the beans in a large saucepan or stock pot with water and bring to a boil. Add remaining ingredients, except cilantro and salt, and cook 2 - 2-1/2 hours, or until beans are soft.
  • Add cilantro and salt to taste. The soup should be moderately thick.
  • Use the soup to make Black Bean Chile or serve garnished with Pico de Gallo, sour cream, and grated cheese.
