Almond Flan

DIRECTIONS
Stir water into sugar and then, using an 8-to-9-inch skillet, bring the mixture to a boil. Use a brush dipped in water to wash down any sugar crystals climbing to the sides of the pan. Continue to boil over high heat, undisturbed, until the mixture turns a rich amber color. Once it turns, you may stir. When it is golden brown (caramelized), remove from the heat. It may smell burned--caramelized sugar literally is burned sugar. Immediately pour the sugar into a 9-inch cake pan at least 3 inches deep, so the sugar coats all sides, or use 8 individual custard cups, well buttered.
Beat together the remaining ingredients. Pour into the prepared pan or cups. Then place in a larger pan, half filled with water. Cover with foil and bake for 55 minutes to 1 hour at 350°, or until the custard is set.
Remove from oven, uncover, and cool out of the water at room temperature 30 minutes. Refrigerate, unmolded and covered, until ready to serve. The sauce will soften during refrigeration. Simply run a knife around the edge and invert to unmold.
