Baked Acorn Squash with Cider Sauce

Preheat your oven to 375°F.
Place the squash halves cut-side down in a pan and bake about 45 minutes until tender.
While the squash cooks, place the cider and rum in a pot and bring to a boil.
Boil until the liquid is just slightly thickened and about 1/2 cup liquid is left. Turn off the heat; if the boiling and bubbling doesn't stop, you are boiling sugar and have created a syrup. Strain the juice through a sieve.
Heat the butter and lemon juice in a frying pan. Add the apple and sauté until soft, about 5 minutes.
Place each acorn squash half on a plate and fill the center with apples. Top with cider sauce.
