Artichoke Sauce for Pasta

  • Squeeze out the water in the artichoke hearts, then chop them fine--nothing bigger than a corn kernel.
  • Heat the oil and 2 tablespoons butter in a frying pan.
  • Add the artichoke and lemon juice and cook until tender, about 5 minutes.
  • Add the parsley, peas, and egg, if used, and cook 1 minute more.
  • Turn off the heat and stir in the last tbsp butter.
  • Serve with the pasta.
