Arugula, Sun-Dried Tomatoes, and Goat Cheese

DIRECTIONS
Bring a large pot of water to a boil. Add the pasta and cook until al dente, following the manufacturer's suggested cooking time.
When the pasta is almost done, heat the olive oil and garlic in a large frying pan over medium heat. As soon as the garlic sizzles, reduce the heat to low and add the sun-dried tomatoes; cook until they are heated through, 1 to 2 minutes more.
As soon as the pasta is done, drain it and add the sun-dried tomato mixture and the arugula leaves. With your fingers, drop in the goat cheese in small clumps. Season to taste with salt and pepper. Toss well and serve immediately.
